🍲 My Famous Halloween Pumpkin Chicken Chili Recipe

Warm up your taste buds with this delightful Pumpkin recipe!

Pumpkin Chili - No eye of newt!

Halloween night can be hectic. Parties. Trick or Treating. Shuttling kids around. When we did our home haunt, we'd have a dozen friends assist us to play the parts of vampires, witches, zombies, and werewolves. I kept them well-fed with My Famous Halloween Pumpkin Chicken Chili. There was no last minute cooking for me. I'd start the chili in the slow cooker early afternoon, and it took care of itself. On their breaks, the cast of ghouls served themselves, adding all their favorite fixings. The stores are filled with pumpkins so grab a small sugar pumpkin for this recipe. The idea of adding pumpkin to chili might seem, well, off. But on a chilly October evening, you'll be in for a warm and delicious treat.

Here's what you'll need:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 cups diced red bell pepper
  • 1 cup of dark or pumpkin beer (or to your taste)
  • 1 pound of boneless chicken breasts, cut into bite-size pieces
  • 2 cans (15 ounces) diced tomatoes
  • 2 cups cubed, cooked fresh pumpkin*
  • 1-2 cups chicken or vegetable broth (add more if needed)
  • 3 tablespoons chili powder
  • 1 teaspoon cumin
  • red pepper flakes to taste (careful!)
  • Salt and pepper to taste
  • 1 tablespoon unsweetened cocoa powder
  • 1 can (15 ounces) kidney or black or pinto beans, drained and rinsed
  • 2 tablespoons chopped fresh cilantro

Toppings: sliced green onions; shredded cheese; sour cream; chopped fresh cilantro

Step-by-step instructions:

*The day before cut the sugar (aka pie, sweet, or baking) pumpkin in half and scoop out the seeds and stringy innards. (Bake the seeds later with olive oil and sea salt.) Set the oven to 350 degrees F. Place the pumpkin halves cut side down on a baking sheet and pierce skin with a knife several times. Roast for 30 minutes. The pumpkin should still be firm (it will finish cooking in the slow cooker). Once cooled, dice into 1" squares and store in a container in the fridge.

  1. In a pan, add the diced onion and sautΓ© until the onion is translucent. Add the red bell pepper and garlic. Cook for two minutes, stirring so the garlic doesn't burn.
  2. In a large slower cooker, add the onion/garlic/pepper mixture and all the ingredients. But not the last three underlined ones.
  3. Set your slow cooker for 6 or 8 hours. Consider when you need to serve the chili.
  4. Stir the chili several times.
  5. During the last 30 minutes, add the beans and cocoa.
  6. At this point, it's also safe to taste for flavor and spiciness. More salt? More chili powder? More cumin? More cocoa? More beer? Does it need more liquid?
  7. At the end of the cooking cycle, set the slow cooker to warm and stir in the cilantro.

Set out the bowls of garnish, along with salt, pepper, and red pepper flakes.

Trust me when I say that this pumpkin chili is the epitome of fall comfort. Don't knock it until you've tried it! Post a picture at https://www.facebook.com/esmagill/

Halloween Treats Part III

Eye See You!

  3. purchase some red food gel
  4. squirt red gel all over the cupcake to resemble a bloodshot eye
  5. place the gummy eye in the center

The Haunting Tale of the Abandoned Mansion

Once upon a moonlit night, in the heart of a mist-laden forest, stood an abandoned mansion. Its decaying walls whispered secrets of dark deeds and lost souls. Legends spoke of a vengeful specter haunting the halls, her mournful cries chilling the bones of those who dared to venture close. In the depths of this forsaken place, where shadows danced and forgotten memories lingered, a group of brave explorers sought to uncover the truth.

As they cautiously stepped through the creaking doorway, the air grew heavy with anticipation. Each step echoed through the dimly lit corridor, punctuated by the flickering light of their lanterns. The eerie silence was broken by a sudden gust of wind, slamming shut a long-forgotten door, trapping them inside. Panic set in, their hearts pounding in sync with the rhythm of their trembling breaths. Then from upstairs they heard...

Need a Light?

Found this idea on Youtube. The first time I used a different type of glue and the hand fell off. Fortunately, the lantern didn't break.

  1. You'll need a mirror (thrift store); a skeleton hand (discount store) that has kind of a flat wrist bone; lightweight lantern (Dollar Tree) or use a battery operated candle.
  2. And you'll need a GLUE GUN. Just be careful. I got the worse burn once from not being mindful of my glue gun.
  3. Lay the mirror flat. Squirt a lot of glue on the mirror and at the end of the skeleton hand.
  4. Press hand onto the mirror. Either hold the hand in place or prop against something to keep it upright. Let it sit for 24 hours.
  5. Hang the mirror. Place your choice of candle on the skeleton hand.

I saw one made with a larger mirror and the upper torso of a skeleton. It looked like it was coming out of the mirror! I'm doing this next year.
